Would this be a good tablet to take notes for school?

When I went to school we used clay tablets and sharp sticks, so I can't answer from experience. But I can say that the S Pen is a very good tool for short notes, drawing, and annotation - I can't say how you would do taking class notes. Worth mentioning is that the pen uses a replaceable "point" and that (unlike my S3) it does not come with any spares. I have had no luck locating these but have seen videos of others using replacements from other models (yes, Samsung created a unique S Pen for each model using one - crazy as that sounds.)

Can it be used for reading Kindle ebooks and Nook ebooks?

Of course you can use it for Kindle, Nook & all Android ebook readers. But a phone fits better in one hand & is therefore preferable.
