A baking sort is using radiant heat from a source, and neither the surface underneath nor the surface of the heat source will give an accurate measurement in this case. You could use the surface temperature at the bottom as an approximation if the colors are flesh toned and the heat absorption is similar to a body, but it may not be accurate to what a body will experience.
