Is this a quick acting yeast please.

Haven't tried it yet but suggest it is as instructions say mix with flour before other ingredients. I would however, suggest you look elsewhere. I am most unhappy I felt desperate enough to buy this - I normally use Dove Farm and pay about a tenth of this price. My daughter found a couple of tins of Allinsons easy bake yeast in Tescos at £1 for 100g for me last week - so it is coming back into the shops. This yeast I believe is marked up by tenfold to increase profits from the terrible situation we are all in at the moment. This is my understanding of profiteering. I am annoyed with myself for this purchase, I should have better principals .

Is this yeast 100% Gluten Free?

The packet doesn't say whether this product is gluten free. Try and get in touch with the company directly. I have just read up on this quickly, and all yeast does not naturally contain gluten, but could be contaminated with it or have it added in the drying process. A large supermarket store beginning with T used to give away fresh yeast free. It's worth trying there and asking if their fresh yeast is non contaminated. Hope this helps.
