I would recommend you use the McKee's 37 Interior Surface protectant. Made for interior surfaces and has a light satin finish.

Is it safe on ceramic coated matte finishes?

I've coated my challenger TA's hood, trunk, roof and stripes with Dr Beasleys matte seal and use this all the time for clean up with no issues. In fact I prefer this over the Beasleys final seal.

can I use this product in any other matte color than black??

Yes. because it is clear. I use it on rims that are painted matte black and another car that rims are matte grey.
