How long are these good for unopened?

Vanilla beans have a shelf life of 2 years if properly sealed. We recommend leaving them in the sealed package until needing them!

I bought a 25 pack 5 months ago and just noticed the double sealed bag is all moldy. What will you do?

If just the bag is moldy, discard the bag and use the beans. If the beans are also moldy, I would closely inspect the degree of mold: if mold is throughout the beans, discard them all. If mold is limited to a section of the beans, cut off the section and use the rest of the beans. I would also smell each bean. The slightest odor of mold or mildew would cause me to discard the bean(s). Use your discretion, though: ultimately it’s your recipe/responsibility.

About how many vanilla beans in a pound?

I am not sure but to make vanilla extract I used 10 beans per bottle and filled with my vodka. There were enough beans to fill all 12 - 8oz bottles with about 7-8 beans to spare. ? 120 beans or more
