Will this work fine if you dont pre-scald the quails?

If you use plucker machine – you have to scald birds before you pluck them (scalding temperature for quails: 153-158 F – 40 sec). Otherwise feathers stay inside the skin.

What temperature is better to scald quails?

For quails: 153-158 F –40 sec. Feather retention force depends on poultry’s age, feed, climate and other factors. Therefore, every time before massive slaughter, scalding temperature and duration should be chosen on a case-by-case basis. Scalding container should be big enough to keep the water temperature on the same level after you put a bird inside of it (at least 4 gallons to scald 3-5 quails). Stir the birds in the water for uniform scalding from all sides. If while plucking not all the feather removed, it is necessary to rise the temperature or increase the duration of scalding. If the skin damaged, it is necessary to decrease the temperature or reduce the time of scalding.

Do I have to cut legs off before plucking?

Yes, this is really necessary. If you do not – claws will damage the skin. One more important advice – cut off the legs at the joint. If you cut at the bone, the edge will be too sharp and can tear the skin off as well.
