A square yard is a great buy, as I can cut it into smaller, usable pieces for my cheesemaking. This product shipped very quickly, even arriving at my new address before I did!

I purchased this butter muslin with absolutely no idea what butter muslin actually was. I assumed it was some sort of vaguely culinary fabric—perhaps a polite cousin of cheesecloth that occasionally appeared in recipes written by mysterious grandmothers. Then one evening, fate intervened. With reckless curiosity I attempted to make mascarpone. Cream simmered. Lemon juice appeared. The mixture curdled into something promising… and suddenly the recipe uttered the words: “Strain through butter muslin.” Had I not possessed this humble square of cloth, my kitchen would have descended into dairy chaos. But this muslin—this magnificent, noble textile—stood ready. The weave is perfect: fine enough to cradle delicate curds, yet strong enough to hold the dreams of an amateur cheesemaker. As the mascarpone slowly drained, I watched in awe as liquid whey surrendered itself drop by glorious drop. Hours later, I lifted the cloth. Inside was mascarpone so smooth, so rich, so heavenly that I briefly questioned whether I had accidentally opened a small Italian dairy in my kitchen. This is not merely cloth. This is a dairy-transformation device. Without it, you have cream. With it, you have mascarpone worthy of poetry.

This butter muslin does the job, but I am disappointed in the dimensions. When I ordered a square yard, I had expected a square yard, not a piece cut on a curved shaped bias. It looks like someone was trying to make a wavy/scalloped edge. I have bought several of these packages, some through Amazon and some through another website. All of these come from the same manufacturer.

We made great goat cheese using this.
