How easy would it be to put a hole in the back to have the phone area be accessible for cables?

There are valet/organizer trays listed on amazon that have a slot for cables.Search for valet tray with charging station.

what r the dimensions?

Glad to help. The outside dimensions are 10"X7"x2".

Are these stackable if I buy multiple?

Yes you can stack them, I dont see why not, but they will cover up the compartments

How easy/difficult would it be to remove the lid from the one compartment?

Removing the lid would be easy, but it would leave an unfinished edge where you remove it. There are several other similar valet trays on amazon that do not have any compartments with a lid. Maybe searching for a style without a lid would be better.
