How thick is the sheet metal I don't see tat dimension is specs ?

the legs/flats are about .045in

Will this open 180 degrees and beyond?

Not sure you’d want to go beyond, but after installation, its hard to do. 180 may be hard to achieve. Heck worth a shot?!
