Best filletknife yet
I've been through so many different fish fillet knives it's ridiculous. FINALLY found a GREAT knife. It is sharp, holds it's edge very well. 4- 5 light passes on a diamond rod after each use, maintains the original great edge. Is flexible enough to skin a fish, but not too flexible. I love it, just bought another one to keep at another location.

GREAT cuts
The Mercer fillet knife is awesome! I mainly use this knife to cut chicken breast in half. Previously I would have to cut the chicken breast while is was still frozen, but will this very sharp fillet knife I can easily cut thawed chicken breast. I like the knife so much that I purchased another that I will use for fruits and vegetables. I use this knife more that my high brand name knives. Great purchase.

Good luck getting it out of the plastic wrap
I like the knife. It has a good feel. On the other hand, the bleeping plastic that the knife ships in is dangerous. After reading all the reviews where people had sliced their hands on the knife, I was paranoid about how to strip the plastic off without cutting myself. I attacked it with a knife, with scissors, with a thing I use for opening mail, and came to the conclusion that the edges of the bleeping plastic were probably sharper than the knife. The hottest circle of hell should be reserved for whoever came up with that packaging. OK, rant over. I like the knife.

Solid Knife for the Price Point
Great knife for the price and holds a razor sharp edge. Using for light trimming during deer processing. Removes silver skin with ease and flexible enough that you don't get too much "good meat" while you slice.

This knife is on the stiffer side, closer to a boning knife. It came out of the box sharp enough to shave hair. The handle is very comfortable. I would buy again. Update: After using this knife to clean many fish, I would give it 6 stars if possible, This is the only brand fillet knife I will ever buy again. Holds edge, just the right amount of flex to backbone, very comfortable handle with trustworthy grip feel. I have multiple fillet knives (much more expensive) and none of them come close to this one. I purchased the DALSTRONG Filet Knife - 7" Flexible - Gladiator Series at the same time as this Mercer. The Dalstrong is not nearly as sharp out of the box (It's described as 'razor' sharp. It is not). The Dalstrong was approximately three times more than the Mercer. The Mercer fillet knife is hands-down better.

Outstanding design and performance! Price for this level of excellence is fantastic.
I have used this fillet knife for everthing from trimming fat off of packer brisket, to filleting fish. Perfect balance and just the right flex in the blade. Easy to sharpen to a razor edge. Price is fantastic for this quality. Handle is comfortable, ergonomic and non-slip. After multiple uses, a quick run through a Chef's Choice sharpener brings it back to a dangerously sharp edge! One of the best I have ever held in my hand...and what a fantastic price for this quality and performance!!! A+++ I will unquestionably buy again if this ever gets so abused that it's time to replace. Highly Recommended!

Es un excelente instrumento de cocina. Lo compré para filetear pescado y el filo, el tamaño y la punta son perfectos. El mango se me hizo más cómodo que otros cuchillos más caros y el metal luce y se siente resistente. Creo que tiene una aleación de carbono, eso podría causar que tenga más filo pero a la vez que se oxide y creo que hay varios comentarios donde ha sucedido. Secándolo bien luego de lavarse puede evitarse.

Very sharp and great for filleting larger fish.
The blade is a bit too long for filleting smaller fish and I'd like it to be more flexible but I'm nitpicking. Overall this is great for filleting and very sharp. The handle has a nice soft touch, slightly rubbery feel, which provides a good grip. Overall great quality and value.

Super knife for fish filleting
I own a fish restaurant and can tell you this is mine and my chefs go to fileting knife. Stays sharp and is easy to re sharpen when needed after 1000's of cuts. Would buy again.
