Welcome to the fam Victorinox
I finally gave in and bought her because of America's Test Kitchen. She isn't cute with her plasticky rubbery looking handle, but I figured I could use this affordable option until I could get an all-star. Then I started cutting transparently thin slices of tomatoes and super thin slices of homemade honey rosemary bread and I realized, she IS an all-star. I bought the 10 inch just cuz the smaller wasn't available, but it ended up being a good choice! My arm and shoulders don't hurt anymore and I feel silly for not realizing sooner that a good knife could make that difference. I use hardly any effort to chop with this knife and I actually look forward to chopping up veggies now. It's so satisfying. Like a little competition with myself on how tiny I can dice those onions. ;P I have used her every day now for a month since purchase and not much noticeable dulling yet. I wash and dry her immediately. She is basically a family member now. Well sort of, my husband isn't allowed to touch her. Will update if/when the dulling begins. Based on previous knives I am not looking forward to sharpening/honing but maybe I will be spared that hassle!

Amazing!
I will start by saying I am not a kitchen knife connoisseur but after using this knife I now know what the difference is in using a quality knife! I grew up knowing Swiss Army knives are one of the best brands of pocket knives and I am glad that comes across on all their chef knives too. Shipping took extra long (3 weeks) I guess since the manufacture was back ordered, I am still waiting on the BladeSafe Cover and its been over a month on that item (fyi if you considering ordering the combo like me). On to the knife; As you can see its a rather simple design, I went with the 10" since I already had a decent 8" with a knife set. It fits in my hand very comfortably and with the textured grip I don't think I will have an issue with slippage, even when wet. I went out and purchased fresh veggies and couldn't get wait to get chopping. 1st slice - WOW!! It cuts sooo silky smooth through red potatoes, onions, and grilled chicken the 1st time around. Now THATS how a chef knife should cut, it's razor sharp right out of the box. Yeah this thing is probably not the absolute best knife out there.. but for around $30 I am VERY pleased with my purchase. I highly recommend this knife as a very good alternative to the expensive german steel knives out there. It was also the same price as the crap you get at local stores like target/walmart which I almost purchased. I knew a quick browse of knives on Amazon sorted by customer reviews would be the best way to find a knife for my needs/budget and man was I right. I will be buying one of these Victorinox 40521 10-Inch Chef's Knife for the parents too!

Cornerstone Of A Low-Cost, High-Quality Knife Set
Update, T+4 Years: still chopping! While starting life as a graduate student, I made the decision to get more serious about cooking to eat better and save money. A functional kitchen begins with quality cookware and a good set of knives; toward that end, I considered purchasing several of Victorinox's knife sets: Victorinox 46892 Fibrox 3-Piece Chef's Knife Set Victorinox 8-Piece Knife Block Set Victorinox 7-Piece Knife Block Set Victorinox Swiss Classic 15-Piece Cutlery Block Set In the end I found that, at Amazon's heavily-discounted prices, it's just as economical to construct a 'custom set' by purchasing the knives individually. This also ensures that you get exactly what you want, and you don't waste money on knives that you don't want or need. In the end, I purchased: Victorinox 40521 10-Inch Chef's Knife, Black Fibrox Handle Victorinox Fibrox 7-Inch Granton Edge Santoku Knife Victorinox 5-Inch Mini-Chef's Knife with Fibrox Handle Victorinox Honing Steel 12-Inch Round Regular Cut, Black Plastic Handle Henckels 20-Slot Super Knife Storage Block All of these products are very highly reviewed, and together they form an excellent introductory knife collection at a reasonable price. This 10" Chef's Knife is definitely the workhorse of the set. While its large size is rather intimidating, it is incredibly light and very easy to handle. The cutting edge is amazingly sharp and, when cared for properly with handwashing and regular honing on a quality steel, it maintains its edge extraordinarily well. This knife far exceeds the quality of anything you will find in a brick-and-mortar store at a similar price point. While I'm sure that you could spend $100+ on a professional forged chef's knife that would perform better, this product more than meets the needs of the typical at-home cooking hobbyist.

A Good Value (and a party favorite)
This is not a sexy knife but it's comfortable, it holds an edge, and it is a terrific bargain. For that, I love it. I have large hands and this fits me very well. You can see from the pictures that the handle has a straight top and contoured bottoms. It might not be apparent that the sides are straight, too. That makes the handle blocky. For me, this makes my grip much more secure than knives that have rounded sides. This shape fits very naturally in my hand, so it is secure and it is not fatiguing to use. The handle has a rough texture, but it's not raspy. I don't feel like I had to build up calluses just to use it. The texture, plus the shape of the handle, makes it easy to keep a safe grip, even when my hands are wet or greasy. There's not bolster on this knife. Instead, the handle flares down where it meets the blade (just down, it doesn't get any wider). That flare is big enough that I've never felt that my hand would slip forward and contact the blade. The knife feels sturdy. If I grab it in both hands, I can flex it about a quarter inch. It weighs about 6 5/8 ounces, which is is enough heft to keep me aware of it, but is light enough for my daily use. I use it for veggies and meat and am very satisfied with it. I haven't tried to butcher a chicken with it. I find the curve to be workable. I have no problems rocking it for chopping. The blade is tall enough that I don't worry about rapping my knuckles when chopping, either. I have had no problems with it keeping an edge. I hand wash it and it hasn't developed any stains or rust spots. Overall, it's a good knife and a great bargain. Probably the best thing about it is that at this price, I can hand it to guests and not cringe in fear when they bang away on the cutting board.

Astonishing Piece of Equipment
I have been curious to find out for myself, and I can tell you that everything America's Test Kitchen has said about Victorinox knives holds true. I've had this knife for three weeks now, and it's difficult to find fault with it. It is not as solid feeling or hefty as my Wusthof 8-Inch Cook's knife and I almost knocked off a star for that. I quickly recalled that the Victorinox didn't cost $100 either. It has passed all my kitchen tests with flying colors. Out of the box, the first test was fresh tomatoes. The knife is as sharp as a surgeon's scalpel. With very little pressure, the knife sliced tomatoes tissue thin. Next up, mincing fresh garlic and herbs: effortless and extremely efficient. Slicing roast beef: getting wafer thin slices couldn't be easier. I waited a couple of weeks to try my ultimate chef's knife test: chicken bones. I was concerned about the knife's light weight and lack of heft. Although it is razor sharp, is it strong? Off came the chicken's backbone in two strokes! Not a mark or dent on the blade anywhere. This knife is quite long, so I did have to be careful not to slice into the breast on the other side of the chicken. Overall, amazing. Also, the knife is easy to maneuver despite its length. I can thinly slice pitted olives with confidence and safety and in the next move quickly chop a couple of bunches of kale. It maintains its original sharpness with just a few strokes on a steel. On to the handle. It isn't pretty (I really like the look of the Wusthof riveted handles) but it provides an awesome, solid grip. Hands wet or greasy? No matter. There is just no slip with the Fibrox handle. I can't recommend this knife highly enough for the home chef. It's an unbelievable $32 very, very well spent.

Culinary student gift
Culinary student Xmas gift. It is a comfortable knife, extremely sharp and well recommended by chefs. I read reviews from major publications. Very reasonably priced for the quality. Hoping for no injuries.

Great Knife!
I was a little hesitant about buying a knife this expensive. After all, I'm a new cook. I try to research my purchases beforehand so I don't buy the wrong products and this knife is really good. After researching, Victorinox seems to be one of the best brands out there and it definitely is the best value for your money. It's unfortunate that the knife doesn't have a sleeve. Otherwise, it would have gotten a five star. Then again, it's probably because most of the professional cooks already have a sleeve for the knife whereas I don't, since this is my first knife. The first time that I used this knife, I can feel the difference between this and the cheap knives bought in Walmart. I've never had to buy knives since I usually share with a roommate and they usually have one. However, I decided to buy one and I would never buy one in walmart again. This knife is really sharp and it's been 3 months and I haven't had to sharpen it yet. Hopefully not soon anyway. This is my only knife so I use it to cut meat and vegetables. The knife glides through meat and vegetables very easily. I also cut frozen meat sometimes, without defrosting it, it still cuts through it.

A must have knife
This is one of my go-to chef's knife that sees constant use in the kitchen. It is easy to grip and use, particularly on larger cutting jobs. The blade stays sharp, requiring only weekly attention to refresh the edge. It is well balanced and easy to handle for its length. I highly recommend this knife.

Great chef's knife.
Wow, it's razor sharp. Be careful and count your fingers. It's really comfortable to use and seems to hold it's edge well. Be very careful.

Ottimo coltello per uso quotidiano professionale.
Coltello di ottima fattura, arriva già affilato. Lo uso tutti i giorni in una cucina professionale. Ottimo il rapporto qualità/prezzo. Il coltello é ben bilanciato, leggero e sta resistendo allo” stress test” da due settimane, lo consiglio a chiunque voglia avere un buon coltello senza spendere un capitale.

Ya había comprado uno pero lo regalé Es un cuchillo de muy buena caldiad, excelente filo, super ergonómico, puedes cortar cosas pequeñas o grandes, carnes, vegetales, etc. Vitoninox es garantía de calidad. Lo recomiendo ampliamente.
