The overall height from floor to top of dollie is 2.75 inches.

What is the width of the center channel?

The bottom of the channel measures 1.00 inch. It will fit something 1.00 inch wide very easily. The bends are slightly rounded and the top of the channel is a little wider.

Is there any assembly required? One of the pictures states "screws and washers not included."

No, no assembly required. I have no idea what that refers to. There were no screws and washers included with mine.

Can they be used to roll a mattress a short distance?

Yes, it will roll a mattress but it may be a little difficult to balance since the width and height are pretty limited.
