Will it do for a pickup below the canopy

I have never tried it for that, it is only 16mm wide, so it would depend on the gap you need to fill. I have used it as a top seal on an estate car to close the gap between the body and the rear light fitting to prevent water getting in through that point. have you asked the seller?

Can this be used over the rubber seal around my windscreen that is cracking

I used it over my rubber seal on front window just to tidy the look of it, but if it's leaking best to replace original.
