My best description: Like a sliceable parmagiano If you have wished that you could take a slice from a block of parmagiano and just enjoy a bite, try this cheese. Please experts excuse my spelling of the above mentioned very lovely cheese. This cheese is like it, except for being medium soft and a bit more aristocratic and polite. This sheep milk cheese is the most stand-alone cheese which I have ever tried. This not a cheese which will have you reaching for the mustard and mayo, just to make something edible with it. It would be kind of a shame, to slather condiments all over it. The flavor is so lovely. This is an expensive item. I highly recommend the 3 pound block of this sheep milk cheese, as a once-per-year purchase.

This pungent nutty sheep's milk cheese is wonderful alone or with crackers and full-bodied red wines. A light sprinkle of fine shavings can make any salad memorable.
