Will acid like lemon juice or wine affect the coating?

No. I left a pot with water to boil eggs on the stove and forgot about it for 6 hours. The water was gone and the pot was black. I washed it so easy and you could never tell anything happened. Pot still looks like new. These are amazing pans. I did a lot of research to find these. Every time they come out with a new one I buy it. Want to have them all.
