Do these work with 5 GHz wifi?

No, the LIFX Candle works on 2.4GHz. 2.4GHz is much better than 5GHz for the smart home because it provides longer coverage. 5GHz is better for high bandwidth activities such as streaming. Your router will likely support both, please check the specifications.

Do these bulbs work with Apple HomeKit or is it just through the app?

I believe on/off and some color selection works through Homekit, but the multi-color mixing is only available through the app.

What does the flame mode actuallt look like?

There are bulbs that do the flame look better. This cycles the colors across the surface. Everything else it does it pretty amazing
