Will this convert from 2 speaker to 5.1

I don't think so. It is a transmitter with stereo output only

Does the bluetooth receiver support AAC?

I have no idea, my did not work.

Will this convert sound from sky q box with hd to analogue for old stereo amp / speakers please?

I did mine from old high fi to TV not sky box, using optical cable.

How do i connect my bluetooth headphones? Plugged into tv via optical cable

Hi, it is not possible to connect Bluetooth headphones to the DAC. The DAC converts digital audio to analogue. The Bluetooth connection is between the digital audio source (eg mobile phone or tablet) and the DAC. The analogue output from the DAC are cable, either RCA coaxial or 3.3 mm jack.
