Do you add any water to the meat mixture?

During the mixing process while using a meat mixer I add 1/2 to one cup of water, then mix until the mixture get sticky and sticks together well. The answer is yes for the purpose of protein extraction. Sorry for the long answer but this is the process that makes the mixture into a quality product.

hello, I want to make hot-dog style sausages, what casings do you sell that would accomodate this best? Same question for slimmer hot snack sticks?

Sheep casings are the hotdog size. Hog casings are like bratwurst. You can also buy artificial casings. Edible and non-edible.

Is the nitrite mixed into the 14 oz bag of seasoning or is it separate so there are two individual bags, one with nitrite and one with seasoning?

You have to add nitrite..it does not come with the seasoning...
