The thermometer starts to work at zero degree or not?

Usually it starts out at the air temperature or at the last temp that it shut off. But it will start adjusting immediately to the temp of whatever you are measuring.

How to install or take out the battery?

This food thermometer model works with alkaline button battery LR44. Please unscrew the battery compartment at back of thermometer by small coin and you can take out or put in the LR44 battery freely.

Can it measure the temps of candy or dough?

It will display whatever temp the probe is. be careful only to test the probe - not the handle.

It can be inside the oven?

I would advise you not to do so, I wanted to make cookies and tried to use this thermometer to measure the temperature of the oven, so I opened the oven door and held the needle towards the inside of the oven. It eventually began to read “High” and wouldn’t read anything else after that. It didn’t work again until I removed the battery and replaced it. I think you should look into an all metal thermometer, because this has plastic which can melt inside of the oven causing fumes.
