no, cured in heavy salt. Make sure you ask about there shipping. Because I got a refund as they shipped USPS instead of UPS and I have a metal mail box in the summer. They packed it with ice packs but when I got to it the can was 80F. And no go as it needs to be at least 40F to keep. Overnight is the only way to go.

What is the product expiration date?

I don remember if I had the expiration date non the jar because I bought this a long time ago; I could say the taste of salmon caviar inside was excellent; from my knowledge, a well-sealed jar could be good for 2 years. This brand is original Russian , very good staff.

Is this caviar pasteurized?

Salted. Caviar is NEVER pasturized! It is either "lightly salted" or "heavily salted"... fish is never "pasteurized"
