where are these made?

I believe they are made in Germany. I returned them because you have to hone/sharpen them before using. For the price there are several other manufacturers that cost the same or less and are ready to use right out of the box.

What mallet should I use on these?

When I want control I use a square faced wooden mallet, early on I thought that with a sharp tool and good mallet a single power blow should do the trick, over the years I found firm tapping blows produced better cuts. To power through heavy material removal I like a round carving mallet with a polyurethane face. It transfers a lot of energy and is easier on your handles.
