How long is the process from caterpillar to chrysalis to butterfly?

It takes about 3 weeks for caterpillars to turn into butterflies, with 5 to 10 days in the caterpillar stage and 7 to 10 days in the chrysalis stage.

Can they stay in the jar until their release?

They probably can. The idea is that they attach to the paper that is on the top of the lid, then they turn to chryilis, then to butterfly. If you leave then in the jar, they would need to be released as soon as they change, so they can spread out. If you have then in a butterfly house, you could keep them in there for a little while, because they have room to get around, and eat leaves, and drink
