Question 1

Can you leave it connected to an AC outlet for charging after the internal battery has been fully recharged, or will this damage battery ?

Usually a manual will say "Don't charge for over 24 hours" as a hint of the charger not being regulated.  I don't see that in the manual making me think it's not a problem, yet I also don't see anything like "Can be left plugged in 24/7" to prove it is regulated.  They say "charge until you see green LED on solid or flashing" where flashing may be when it is sending power but is pretty "full" while solid may be when it's "full" and power flow is blocked by the regulator.  That's my best guess based on what I see in the manual.  An easy test to do would be connect up a volt meter and watch it as it charges.  You may likely see that while the green LED is solid the voltage slowly drops from ~14.5 to ~13V, when it flashes it goes back up from 13-14.5 and as long as you never see anything 15V+ you know it is regulated.

Can it jump a v-6 nissan maxima 2001 ?

Yes it has plenty of power to do so.  There may be other reasons the vehicle won't start but not because there is not enough power to the battery.  I have had batteries get a dead short inside and they won't jump off but that is fairly rare.

How many cold cranking amps does it put out?

They don't go by CCA on these, rather another test another OEM calls "Cranking assist amps".  Here's the details of each from copy/paste as the OEM described:

CCA (Cold cranking amps) = The discharge load measured in amps that a new fully charged battery can deliver at 0 degrees F for 30 seconds and maintain a terminal voltage greater than 7.2 VDC.

CAA (Crank assist amps) = The discharge load measured in amps that a new fully charged battery can deliver at 70 degrees F for 5 seconds and maintain a terminal voltage greater than 7.2 VDC.

Ever since I got a similar pack I knew something was weird with a label of "500 crank amps" on a 15 pound battery versus a car battery that weighs 50 pounds having "500 CCA".  Those test details explain the difference with the time the test lasts being 5 seconds versus 30 seconds (as well as temps).  So when you see those big numbers on these (like "2000 peak amps"), realize they must be for a very minimal time (which I call just a sales pitch that has no meaning).  Further evidence comes thru in manual statements like "Never crank a car engine for even 5 seconds or you'll damage our (tiny) pack battery" to show how long it can handle such.  Hope that shows you the truth about what these packs can do (where they may get many started, but they're not a "2000 amp power source").

I have one of these and have a question before I blow my cell phone out--can I use my car cell phone charger to charge my cell phone?

the cig lighter plug is 12V.  It will only pull whatever you plug in.  DC not AC current.
