My first experience with ancho peppers were from a label with a woman's name and a carrot in the middle of her name. Those peppers were very dry and brittle and I was disappointed that I couldn't detect the raisiny scent people talk about elsewhere. I rehydrated them, and upon tasting the rehydrating water and finding it very bitter. decided to use fresh water to puree them. Even so, the peppers still had a very bitter flavor. I decided to try these peppers and they are a lot more pliable, and yes, they do have that raisiny scent. I decided to do a test batch and after rehydrating, the water did have a sublte bitter flavor, so I pureed them with fresh water and other additions and the flavor was excellent. Wondering what to do with the test batch, I decided to make some chili, and the only tomato ingredient I added was a small can of tomato sauce. Best chili I made, even if it wouldn't win a chili contest. It's what we like that counts.

Perfect mild sweet chilies.
A very nice bag of dried chilies. They are not brittle, perfectly dried. Nice deep color. Mild sweet heat. Gave the dish a wonderful sweet, chocolate note, fruity hint. They really added to the dish. These were perfect.

Review
Ancho retained moisture and have good flavor. Have only used once, but produced a delicious sauce for roast chicken. These are not the paper-dry chilis you find in so many northern grocery stores.
