What fitting do I need to get to put this inline with my heater inlet plumbing?

A simple pipe clamp large enough to wrap around your pvc plumbing is all that is required.

Does this include the O-Ring for installing in water pipe?

Yes it has o ring but I used it as the air temp sensor. They are both the same.

i want to use this sensor to make a control circuit for gutter heaters. Does anyone know the parameters of this sensor? volts, amps, PNP?

I know this is a 10K thermistor and connects on the low voltage side of the Pentair control unit.

Will this work with Suntouch pool control system?

It is listed as supporting Suntouch - as long as it uses a 10K-Ohm thermistor sensor. My older Pentair system required Linear TS5L sensor. It will either work, or you'll need to return. You may want to Google your Suntouch model for any gotchas.
