Can this be set to create jpeg files?

Yes, scans to jpeg and then you join the pages to pdf if desired.

What is the dpi for each scan with the Aura? Would this work well for quality scans of photographs (especally old photos in concave glass frames)?

Hello, the DPI is 240. It is not recommended to scan photos in concave glass frames.
