Can these be used for making candles?

I don't see why not. I use them for making baby food so I don't know how they would react from the heat of the candle flame.

what size labels do these require?

These jars are a bit smaller on top than on the bottom. If your using sticker labels, you may have some issues if they are to cover the whole jar/product. I ended up tying small tags to the jars. The part of glass that is even on the bottom is 1 1/2" tall x 8" round.
