can you remove the bells?

They can be but not made to, I did on one of them with some pliers and just bend the thin loop at top a few times until it broke off and it didn't affect the toy or string attached

Is the string cord a bungee?

No. It's a strong nylon? cord. None of my cats have ever been able to chew through it. But then, I usually don't let them.

is the cat in the first product image to scale ? and if so, how old is the cat?

I don't know where this image was, but no, it is not to scale. The feather toys and the plush "wormies" are about six inches long.
