Great book
I loved most of the book. There were about 2 or three recipes that I would never try because I don't believe that eating blood dishes is healthy or satisfies my religious beliefs. Other than that, the recipes sound great and easy to make.

Interesting oral history
Nice little book. About 4ร 4 inches, 1/2 inch thick. Not a cookbook that you're really going to use. Its an oral history, a record of recipes passed down by elders. A collectible, not what I expected.

NEW MEXICAN COOK BOOK.
Really cool cook book of old New Mexican cuisine!... not to be confused with Mexican cuisine. I remember my grandmother preparing many of these and or having them on the table around various holidays. A must have for any Nuevo Mexicano looking for authentic New Mexican. Most of the recipes are very simple but are very good. ยกQUE VIVA LOS HISPANOS!..and I found out I am related to her ( on my dad's side).

Traditional regional New Mexican cuisine
A short cookbook, more focused on the traditional dishes in New Mexican cuisine. This is a regional cuisine not familiar to most Americans, as New Mexico has low population and is rather remote in many ways. If you go to a New Mexican restaurant, you'll see sopapillas (fried dough stuffed with meat and potato or sweet with honey) and pozole, a dried hominy corn stew also made in Mexico. The key ingredients in this cookbook are red chili colorado (a sweet, not very spicy red dried red chile, the one you see hanging in "ristras" from the eaves, and used almost as you'd use paprika in Hungarian cooking. It reddens the sauce) and of course the famous Hatch green chili, usually roasted fresh in the fall and can be found frozen or canned outside of New Mexico. It is used in the famous green enchiladas and other green sauces and it's also hard to replicate with any other ingredient. More a book for learning about the classic New Mexican foods than a full cookbook. But if you are interested in regional cuisine of the United States, it's a good read.

As a cooking instructor at the Santa Fe School of Cooking, i love this book. even tho i recognize these recipes each one that i tried was a complete copy.

Tiny cookbook
Not worth the price! Recipes are ok but book is so small it's hard to read the recipes. I'm very disappointed with purchase. Never again
