Is this pic "mirrored"? Is the left "punching" and right arm "guarding"?

No, it’s like the dummy si trying to give you a hug. I found it works best if when you stuff it you get some 1inch hose from the auto parts store for the legs and arms then stuff rags and and old clothes to fill in the rest. You need the hoses or it will be too limp. Hard to work with.

What do I fill it with?

It can be filled up by recycle textile cuttings or shredding. Can also be filled up with raw cotton or any suitable filler material such as sand bag, rubber granulates for the legs etc..
