How difficult is it to remove when its time to redecorate?

Not difficult at all. Just pull gently away and wipe clean

Can I apply polyurethane as a top coat to make it more durable? And also can this be used to cover/hide old 70s style wood planks in my bedroom?

If your panels are smooth I would say yes you could. Not sure about polyurethane as a top coat. I guess you could do a test piece to make sure it would work.

How many rolls woulf i need to cover 100 sq feet wall?

It is 16.4ft x 1.48ft / Roll. It means 24 sq feet / Roll. So we advise you to buy 5 rolls at least.

I have a room that is 7'9" tall and 11'9" long I am thinking I need the longer rolls and about 8 of them?

My suggestion is to buy four rolls or five rolls with a size of 393" × 17.7", because this can largely avoid insufficient use, and can also guarantee that they are produced from the same batch to avoid color difference.
