I’ve noticed the bags don’t have expiration dates.. Does anyone know what the shelf life is for these cookies opened and unopened?

I don't know the unopened expiry date but I would imagine if you stored them correctly in an airtight container they would last a few weeks to a month. I think the unopened ones would probably be the same. You could freeze them possibly to make them last longer.

What’s the difference with the ube crinkles and the all natural ube crinkles?

it's the other way around, i just ordered the all-natural and they didn't taste much like ube at all. the bag of the all-natural says "cookie and brownie in one. delicious ube (purple yam) flavor." i'll take a non-natural product if it would actually taste more like ube!

Will these be okay if not in the refrigerator?

Keeping them in the fridge will actually dry them out but I think refrigeration will keep them from spoiling prematurely.
