Will they stay on riding a motorcycle?

Yes, if you get the correct size. I personally can wear either size of Ear Mitts Bandless Ear Muffs. When I'm riding in my convertible Miata or skydiving, I wear the Smaller Size as they have a more secure fit on my ears. For everyday activities such as walking my dog, I wear the Regular size of Ear Mitts.

Just how well do they stay on?

They stay on! Never had a problem with them. They are comfortable, keep your ears warm and don't mess your hair if you care about that!!! They come in 2 sizes so if your ears are tiny, get the smaller size.
