What is the capacity?

The capacity isn't bad. Large fish fillets will fit nicely. I can put two in each side (to cook four at once). But the whole fish with the tail won't fit. I had to cut the tail off. As far as little stuff, I can make enough french fries for 5-6 people at one time. Oh, and if you want to remove the two baskets you can still cook like that. A whole fish will fit diagonally if you do that. Hope this helps.

It comes with 3 baskets. You can you use one big one or the two small ones together

How many pieces of chicken can you fry in this unit at one time? Assuming you have a whole cut up fryer to cook.

If you use the big frying basket, you can fry 6-8 pieces of chicken. This is of couse depends on the size of the pieces. You will have to fill the fryer completely with oil. This is a great family size fryer! I highly recommend it.
