Absolutely addicted to shun knives! Got this beauty and further expanded my collection. weight distribution is great, comfortable in hand, razor sharp and keeps an edge, easy to clean, cant say enough good things about shun and the dual core line!

Fantastic knife on all accounts
This is such a pleasure to use. It is incredibly lightweight and holds an edge no matter what I cut through that is as sharp as it is beautiful. The Kiritsuke shape lends well to chopping, dicing/mincing, but it is agile enough to be a slicer, too.

Best knife EVER!
Over the years, I’ve acquired a number of Wusthof, Henckels, and Shun knives, some of them becoming my favorites for various tasks. But this knife surpassed them all and became my all-time favorite at first use. This is an 8” razor blade. It’s perfectly balanced, and the grip fits my (left) hand securely. The blade is thin but is rock solid and firm, with zero flex. To top it off, the cladding is beautiful and looks like a piece of art. The only criticism I would offer is that the sheath that comes with it is bulky. If I were to travel with the knife (I wouldn’t; I’d take one of my others) I would place it in a different blade protector. Yeah, it’s expensive. And very much worth it.

Amazing Knife
I am not an expert on knife nor I will pretend to be. I purchase this knife as a gift to my husband who loves to cook. My husband know more of cooking knife than I do and continues to learn every day. I know he is been looking for a good cooking knife for a while. To say he was happy with when he saw this knife is an understatement. He was surprised, excited and amazed at the quality, sharpness and easiness to handle it. I am looking forward to see how this knife perform throughout time and will post an update if necessary. So far my husband loves it and he hasn't stop using it. Just for that is a five start to me.

Not $350 sturdy 😕
Let me start by saying this is a really nice knife. It cuts wonderfully, is comfortable in the hand for long periods of time, and it is quite a pretty piece to boot. The down side however is that it is very thin and for my uses in a professional kitchen this simply will not hold up. As a result my tip has a chip and a slight warp now. The edge retention is also not the greatest for hours of food processing. That being said if you intend to just use it for home use go for it just be VERY careful with what you bump it into. For the price point I was hoping for better.

Sharpest knife I have ever held and used.
If I could give this 6 stars I would. I would normally never pay 250 or so for a kitchen knife. But after researching Shun and the Dual Core line of knifes, I thought I would give it a try. Besides, Amazon has a wonderful return policy. This is the sharpest knife I have ever held and used. Everything I have sliced has felt like I was cutting warm butter. I have used it to trim up a beef brisket, serve that brisket and even trim down skin on beef feet for my dogs (skin and tendons). Nothing has given this knife a challenge. Spend the extra money. This knife will not disappoint. It is built to last.

Knife of the year
I'm a knife nerd, and this is one of my favorite non-custom knives. Cuts beautifully, great pattern on the blade. If you aren't the type to take care of your knives, this is not for you. It does require some upkeep, for example, wash it IMMEDIATELY after use and dry it thoroughly. Never, ever let water or acidic foods sit on the blade-it will degrade and rust. If you are not comfortable with properly sharpening your knives using a whetstone, find a reliable place for regular edgework. Love Japanese knives (but I do also use European ones) and this is heirloom quality.

Best knife i own!
Iam a chef and I'm very passionate about not only my cooking but my knives as well. I have only just started my collection of high end knives and this baby sits next too a few other shuns and i can tell you that this knive has set the bar high. It's saved for those more delicate tasks and does amazing with preping seafood and soft veg, you really feel like a master using this knife. The only complaint I have is not to do with the knife but as others have said the sheath is rather cheap, so i decided to cut it half and install some soft vinyl, after glueing it back together and giving it a re paint and vanish the knife glids in nice and snug and it looks totally bad ass slid in your apron.

Super light great knife for professional line cook or chef or culinary creator.
Great knife for a kitchen ninja. Works in tight spaces, but watch those fingers. Very light and dexterous. Almost too light if you are not used to it. Lovely mince and all types of brunoise. Basic protein slicing during service. Stays sharp. Lots of esge to keep sharpening into. Love it.

Requiere mejorar el filo.
Es un muy buen cuchillo y es muy versátil. Se puede obtener un muy buen filo y lo conserva muy bien, para mí esto es lo más importante. Los acabados son muy buenos aunque no tan buenos como en la línea shun classic, en este caso, el logo de shun no está muy bien definido en un lado del cuchillo y por el otro lado partes del las letras ya se están borrando. El filo original no era muy bueno y tuve que afilarlo para obtener el verdadero potencial de este cuchillo. El empaque que recibí no venía con cierto desorden y me da la impresión de que fue re-empacado aunque se anunciaba como nuevo, faltaba el clip de la funda de cartón. Estoy satisfecho porque lo compré a un precio bastante bueno.

I gotta say is one of the best knifes I've got so far
Whatever some Chefs have to say about Shun giving them an average or OK rating versus other high end Japanese knives, I gotta say is one of the best knifes I've got so far, razor sharp, comfortable, perfectly balanced and it looks stunning(which is part I care the least). 100% recommended. Just wish it came with a bamboo guard instead of the cheap plastic one, its almost 400 bucks for the knife, but again that has nothing to do with its performance, so 5 stars.
