It even cut my dish when I tried to dry at the first time. ### ⭐⭐⭐⭐⭐ Extremely sharp, well balanced and lightweight! *by A***R on August 15, 2026* There’s a reason Anthony Bourdain used and recommended these knives. This is the lightest and sharpest Chef’s knife I have ever used! And I have a Wustof (German) Chef’s knife as well as a Shun (Another Japanese) chef’s knife. This is my go to Chef’s knife…absolutely great for slicing and dicing, but I would use a heavier knife if you are cutting thru bones, say for instance breaking down a whole chicken. It has a 15 degree bevel edge as opposed to German knives 14 degrees and most Western style Japanese knives which are normy16 degrees. So invest in a sharpener that can be set for 15 degrees or use a whetstone and an angle guide. Also, use a ceramic honing rod as opposed to a steel rod to put a razor sharp edge on it. You won’t have to do this often even with heavy use, it retains an edge very well!
