This is definitely the Ceylon cinnamon that they sent me. I compared it to my Saigon Cassia. And, they are vastly different. Ceylon is more delicate, sweeter, lighter brown, and has the definite note of citrus, and this organic cinnamon definitely has all those qualities.I liked the fact it is indeed Ceylon when they said it would be. I like the jar that they placed it in. I would recommend this product to anyone that likes and needs more subtler flavors than the predominant Cassia cinnamon provides.Ceylon cinnamon also has much, much less coumarin than Cassia cinnamon: coumarin which is potentially toxic depending on amount consumed and such. ### ⭐⭐⭐⭐⭐ I have never tasted cinnamon that taste this good.
