There is an organic version of the 5 oz peeled as well as a 13 oz peeled organic. **Q: Can these be frozen to extend expiration?** A: Yes, they can be frozen but it will affect texture. The best by date is about 6 months to 1 year at room temp and should refrigerated after opening and will last many months. **Q: Can you cook it in a microwave?** A: I'm sure you could warm it in a microwave, but why? It has a sweet, intense, terrific taste as is. It is not a sharp "garlic" taste that is best cooked in some manner, the preparation has already done that. Raw garlic is an aromatic, best cooked. Black garlic is not, in my opinion. I slice it into smaller pieces, and simply add it to foods. (Sometimes, I just take a piece out of the jar and nibble it. It's that good.) **Q: to clarify, it has one year shelf life whether or not it is refrigerated? My dad likely wont' store cold due to tiny fridge in retirement home.** A: I bought this from the vendor at a Chicago farmers market 2 years ago. It’s been in the fridge opened and I just ate some and they are fine. They seem to last forever.
