Koshihikari is a varietal that is synonymous with Niigata prefecture, but it’s grown in a lot of different places. In my personal view there are different grades of US-grown koshihikari and this is a mid-level brand. A Japanese one is gonna be 2-3x the price of a CA koshihikari. That premium is too steep, in my view. **Q: How many cups of rice can I get out of this bag (4.4 LB/2 kg)?** A: approximately 8 to 10 cups of uncooked rice, or 24 to 30 cups of cooked rice. Depending on how soft or firm you cook your rice, and if you use a rice cooker or not. **Q: What variety of rice? I'm looking for Japonica.** A: It is japonica short grain which is one of two major rices grown and used in Asia. The 2nd is indica which is a medium grain and is usually had a dingy color to it. **Q: So is this the new crop or old crop?** A: I would suppose that depends on when you actually make your purchase. Thanks Aaron and Claire🥰 I put a little Korean toasted sesame oil in with the salt and let soak for 30 mins before cooking in my Japanese rice cooker, “zujiruski” on sushi.
