With wheat (whole or white) flour I add 2 Tbsp per loaf to give them extra elasticity during kneading and to help them rise. Gluten is the essential ingredient for rising properly. I have some ideas of my own I'll be testing. I made a "meat loaf" recipe and shape the first time and it was pretty good overall.
