SInce then it has become one of mybetter kitchen “hacks”...a quick way of getting somewhere without a lot of effort. The sauce has a hint of “spices” in addition to the 95%+ bouquet of toasted shallots. The spices, however, do not characterize the sauce, i.e., it is not an “Asian condiment” per se. I use it liberally whenever I am cooking and I want`the shallot aromatic in a hurry. No more peeling the papers and chop chop. As many know, shallot bouquet is sort of between onion and garlic, and the Bullhead sauce does not disappoint.As an example, if I want to make a quick weeknight risotto, I no longer have to chop onions or shallots, and then sweat them before adding the rice. I just put some olive oil in the pot, warm it up, add the rice, and add some Bullhead shallots as I am toasting the rice, and then the white wine, and then the broth....In 15-18 minutes a basic risotto is ready.For anyone not familiar with Bullhead Shallot Sauce, it is not really a “sauce” which implies a smooth pourable condiment. Bullhead is toasted/roasted shallots packed in canola oil. The aroma is delightful, not sharp nor harsh. You can use a bit of just the oil to flvor a salad dressing for example, and use just the shallot pieces when your recipe calls for that.
