Review: My Go-To for Wrapping Brisket on the Smoker - I bought this Bryco Goods pink butcher paper specifically for smoking meat, and it has worked exactly the way I wanted. When I’m putting the time into a brisket or other long cook, I prefer butcher paper over foil because I can wrap the meat without completely trapping all the moisture and softening the bark. The 18-inch width is convenient to work with, and the 175-foot roll gives me plenty of paper for multiple cooks. It’s strong enough that I can wrap a large piece of meat without it immediately tearing apart, even once it starts absorbing some of the juices and rendered fat. I also appreciate that it’s food-grade, uncoated, and unwaxed. For something that’s going to be wrapped directly around food for hours in the smoker, that’s exactly what I want. There is definitely a little technique involved in wrapping a brisket tightly, especially with a larger cut, but once you get the hang of it, the paper is easy to work with. For me, this has become part of the BBQ routine: smoke until I’m happy with the bark, wrap it in butcher paper, and let it finish. Good quality paper, plenty on the roll, and I’ll buy it again when I finally run out.
