One gallon in a larger bucket means it is very difficult to get it out (rack it) when the time comes, without drawing off a substantial part of the sludge off the bottom. With this smaller bucket, this is no longer such a problem.One thing to take care with is removing the lid the first time. The edges must be folded up all the way round before removing otherwise the seal around the top of the bucket will be irrepairably damaged. Fold it up and down a few times to make it easier.Other than that, a light smear of Petroleum Jelly around the edge and in the bubbler hole, and you are good to brew!Highly recommended.
