The sponge is at maximum size at around 20 to 24 weeks after germination. The sponge-like flesh has a flavour which is a balance between salty, savoury and a little sweet. It can be eaten fresh out of hand but is also a versatile ingredient which can be used in various ways. Try slicing the sprout and using it in place of bread or breaking off small pieces and dipping into chutneys or pickles. - We source the sprouted coconuts for culinary use only.
