I at first though it would be nice to have a way to 'clip' it in, but it's handy for switching between flat and cut pasta.Given this, I think the handle coming off easily might be better than one hard to get off, when your hands are full of flour, damp pastry and trying to switch at that point, you need easy release. It's not wobbly loose.Using the machine - I'd never tried before, though I've made pastry. Learning how to make the pasta dough was super easy watching a video, and I would say using this was the easiest part of all. It is adjustable, and can roll really thick to thin layers.After finding it so easy to do pasta, I decided to try gyoza wrappers! Easy again! My family loved them, and they were so easy to get to the required thinness for tasty dumplings.These I then steamed and presto, saving a fortune.I've made fresh pasta, cookies, gyoza, lasagne sheets, pie tops, and pastry cases.
