It looks like Bob's has discontinued their GF masa... :( **Q: Non GMO?** A: Yes, it is non-GMO. **Q: Can i use this to make polenta?** A: Not if you want it to taste like traditional polenta. The texture and flavor will be different because the grind is different and because the ground corn in this is processed with lime. **Q: is the corn treated with lye?** A: No. The way that masa harina is prepared is by soaking with lime (the mineral, not the fruit). It's the limewater that breaks down the dried corn and gives the resulting pupusas, tamales, or tortillas their wonderful aroma. The process is called "nixtamalization."
