Can be a bit of a minefield when you find conflicting information on different websites. This is a blend of several grains, designed to be a direct 1:1 substitute for ordinary wheat flour. When I tasted the cake batter, the flour gave it an unpleasantly gritty texture. However, the cupcakes were incredibly light and tender once baked, with no prominent flavours from the flour (though I was making red velvet so this may have been disguised by the mild cocoa flavour).
