Review: Not bad… - Good quality mirin is hard o find in the US, especially if you don’t have a Japanese grocery nearby. An increasing number of Sake brewers are setting up shop in the US, and a few have started selling genuine mirin as well. Thanks to the welter of State and even county liquor laws in the US it is often difficult to order the real stuff. In the meantime, products like this Morita Organic Mirin will fill the bill. Although it has added salt to appease the various liquor authorities (like so-called “cooking wines”), the amount added s far from bothersome. This mirin is definitely a big step up from the Aji Mirin sold in most large groceries - mostly produced by the company with all the “K’s” in their name. Aji means “similar to” or even “Pseudo” or “Fake” when used with food products and generally imputes very low quality. Morita’ s mirin is decent stuff, certainly acceptable for daily cooking, and while price higher than Aji Mirin’s, remains within reach for many folks. I eat and cook “Temple Style” which derives from Buddhist monastic kitchen. Mirin was often forbidden in the early days of Buddhism in Japan, as it has a wine base, and intoxicants are not used by Buddhist monastics. In recent centuries this rule has been substantially relaxed in regards to Mirin as it is understood that the amounts used are too small to intoxicate. Bottom Line: Morita is an adequate mirin for daily cooking. It’s a little less expensive than the Oshawa Mirin that is similar in taste and use. Neither has much Sake flavour left, but at least they do not taste of artificial ingredients and odd substitutions like the Aji Mirin’s.
