I forage and make jelly from all sorts of wild fruits and flowers, and this pectin has proven itself over and over in providing a good set and beautifully textured product. In waiting for an order of this last week, I broke down and bought a few pink boxes of SJ at the grocery store, and ended up having to recook 2 batches of jelly when the order arrived because the SJ didn’t set properly. So far I’ve made no sugar added jelly from: muscadines, possum grapes, pyracantha berries, elderberries, black locust blossoms, tea rose petals, dandelion blooms, wisteria, clover, honeysuckle and blueberries. If you like to cook with a totally reliable product that produces tasty results, this pectin is it.

This pectin worked great. I made a small batch of plum/blackberry jam (wild from my property). The pits were removed from the plums. All the fruit was then weighed and 5% pectin was added based on the weight of my fruit (in the instructions). I added monkfruit/erythritol for sweetener. Cooked it, added the pectin and “sugar” at the same time. Cooked it some more and then high pressure in my instapot. Nice thick jam resulted.
