If you want high quality fried chicken or other foods that require a long frying period, this will not work. I also find that making a large batch of pancakes doesn't work for the same reason-- the other reason I bought this item! The pancakes that happen to be on the skillet while the heat is on come out great, the next one to go on where the heat cycles off in the middle of cooking comes out looking sad and takes longer to cook, drying it out. Cuisinart-- upgrade your design to allow continuous heat and I'll buy this again in heartbeat!
